I have used Monteray cypress for an inner case Italian including the soundboard the instrument was a success in that players liked it very much. I think whilst Monty cypress looks and smells like the real thing it tends to be a bit splitty and samples can vary a lot in density, I have enough left for another instrument. The other wood I have used for Italians is Lebanon cedar it too was successful, I have never used Italian cypress for comparison.
