Most "Zimbalsterns" have no particular beat speed.  If you listen to
different recordings by different builders, the speeds vary.  As a
matter of fact, most commercially constructed units have a speed control
of some sort......that the organ builder adjusts to suit his/her
tastes.  Also the acoustics of the room are a determining factor in
speed adjustment of the unit.
