Well well well...my favorite thing as an orgist and what got em known while living in Seattle-Tacoma...Free Harmonizations!
My hymns consist of:
-A large introduction from my collections Majectic Beginnings...which will go to publishers in the fall. They each have some type of fanfare statement for a louder reed register...but if you dont have an En Chamade or Fete, you can fake one with full swell reeds and mixtures and the 16 and 4 couplers.
-Inner verses have softer, F registrations...with the next to the last verse havign full swell, box closed, and maybe the great Principals 8 and 4
-Last verse...I put some "sista" in it! Complete with reed 32' if there is one. BUT NEVER...do I use all of these descant type accompaniments. I actually do my own, as I learned from Susan Ferre' in Improvisation lessons, and from Mel Butler at St Marks. I only reharmonize in the ATB and keep the soprano as written in the hymnal! This is what is best, in my opinion. Howard Helvey's book is great at this.
I learned some fun ideas I learned in a master class with J Melvin Butler (St Marks Seattle Organ-Chm the big Flentrop), which is why I say the University of Washington with Carole Terry and Mel Butler is one of the best programs in the country. They teach you how to be a 2-fold musician---concert and church. Mel only reharmonizes in the ATB and keeps soprano as written. And can really really give some good resluts. Just listening to him on a recording of services is enough to learn a wealth on hymn playing.
