Hi Andrew and Bruce,
re "Re harmonic beats: Surely they [string players] do listen?...with regard to string players not listening analytically for beats when tuning: I too am surprised how often they seem not to do so consciously. My theory is that bowed string playing works best when players hear the notes synthetically, ie as a whole note with colours rather than a fundamental with lots of overtones. Or putting it another way, perhaps string players would be driven mad more often if they were consciously hearing lots of beating frequencies, so by not hearing upper frequencies analytically they are practising self-defense. (I don't know any good articles on the subject, but they must exist.)

I expect the best thing (for harpsichord tuners like everybody else) is to be able to turn on and off, at will, one's ability to hear beating overtones separately, but everyone has days when that on-off button doesn't work so well and all you can hear is how far off the first violin is.
