Hi Mike,
The wood has the flecked grain pattern characteristic of English
Holly, Ilex aquifolium, I'd say.

Holly of course makes excellent jack tongues, since the interlocked
cross grain structure helps prevent splitting due to the mortise for
the plectrum.
