Although flour paste does seem very convenient I have only come across the use of hide glue to attach papers on historical instruments. Julian may have a point about how it was used especially for larger areas and it could be a method that reduces the problems of expansion and contraction with the ‘wetter’ process. But perhaps it was just economy of means; hide - or bone - glue was the all-purpose adhesive to hand in the workshop.
