Thanks to all for answering me. I've checked a couple of websites. 

For Rivolta, it's not clear to me if they sell Italian cypress. Under
"tonewood" they only mention Italian pine (more specifically picea excelsa
and picea abies). On the other pages of their site, I can't find any
reference to them selling cypress as well.

This summer I'll be traveling in Piemonte in Italy. Maybe I'll be able to
find a sawmill there.
